Banana Cake: A Fluffy, Moist Vegan Cake Topped with Rich Cream Cheese Style Frosting

INGREDIENTS:

  • 3 ripe bananas, mashed
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup light olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup plant-based milk (e.g., almond or oat)
  • 1 1/2 cups plain flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt 

Frosting Ingredients: 
  • 1 tub (200g) Dairy-Free Down Under Cream Cheese Style

  • 1/4 cup vegan butter (softened)

  • 1 1/2 cups icing sugar (sifted)

  • 1 tsp vanilla extract

  • Optional: 1–2 tsp lemon juice (for a tangier taste)

METHOD:

For the Cake:

  1. Preheat your oven to 180°C (160°C fan-forced). Grease and line a square or round cake tin
  2. In a large bowl, whisk together mashed bananas, sugar, maple syrup, oil, vanilla, and plant-based milk.
  3. In a separate bowl, sift in the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Don’t overmix.
  5. Pour batter into the prepared tin and bake for 30–35 minutes, or until a skewer comes out clean.
  6. Let the cake cool completely in the tin before frosting

For the Frosting:

  1. In a bowl, beat together Dairy-Free Down Under Cream Cheese Style and vegan butter until smooth.
  2. Gradually add sifted icing sugar and beat until fluffy.
  3. Mix in vanilla and lemon juice if using. Adjust sweetness or tang to taste.
  4. Chill for 15 minutes before spreading on the cooled cake.
