Soft, Buttery Dairy-Free Sugar Cookies for Christmas Baking

Ingredients

Cook: 10–12 mins
- 125 g plant-based butter, softened
- 100 g caster sugar
- 1 tsp vanilla extract
- 2 tbsp unsweetened plant milk
- 220 g plain flour
- 1/2 tsp baking powder
- Pinch of salt
Frosting:
- 150 g Dairy-Free Down Under Cream Cheese Style
- 50 g plant-based butter
- 150 g icing sugar
- 1/2 tsp vanilla extract
Method
- Beat the butter and sugar until pale and fluffy.
- Mix in the vanilla and plant milk.
- Sift in the flour, baking powder and salt. Stir until a soft dough forms.
- Flatten the dough, wrap, and chill for 30 minutes.
- Preheat oven to 180°C.
- Roll dough to 4 mm on a lightly floured surface and cut into festive shapes.
- Bake on lined trays for 10–12 minutes, until edges are lightly golden.
- Cool on the trays for 5 minutes, then transfer to wire racks.
- Frosting: Beat Cream Cheese Style, butter, icing sugar and vanilla until fluffy.
- Spread or pipe onto cooled cookies and decorate with dairy-free sprinkles.
