A Warm, Fresh Dairy-Free Salad Everyone Loves Sharing

This Roast Nut & Feta Style Salad is one of those simple, fresh dishes that always makes its way onto the family table. With golden roasted pumpkin, crisp greens, and creamy Dairy-Free Down Under Feta Style, it’s the perfect balance of flavours and textures. Easy, wholesome, and ideal for weeknights or weekend gatherings.

Ingredients

Serves: 6

Prep: 15 mins

Cook: 25–30 mins

  • 600 g pumpkin, peeled and cut into 2 cm cubes *optional 
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin (optional)
  • 60 g baby spinach or rocket
  • 100 g Dairy-Free Down Under Feta Style, crumbled
  • 2 tbsp pepitas, toasted
  • 1/4 small red onion, very thinly sliced

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • Salt & pepper

Method

  1. Preheat the oven to 200°C.
  2. Toss pumpkin with olive oil, cumin, salt and pepper. Roast for 25–30 minutes or until golden and tender.
  3. Whisk together the dressing.
  4. Toss warm pumpkin with greens, red onion and half the Feta Style.
  5. Arrange on a platter, scatter pepitas and remaining Feta Style.
  6. Drizzle with dressing and serve.
