Ingredients
1 pack Dairy-Free Down Under Feta, cut into bite-sized cubes
2 cups Feel Good Foods corn chips, crushed into fine crumbs
1 tsp dried oregano (or Italian herb mix)
½ tsp garlic powder
Pinch of salt & pepper
2 tbsp olive oil (optional, for extra crunch)
Dip (optional but recommended)
½ cup Dairy-Free Down Under Sour Cream Style
1 tbsp lemon juice
1 tbsp chopped fresh herbs (parsley or dill work well)
Method
1. Prepare the feta
2. Pat the Dairy-Free Down Under feta cubes dry with a paper towel.
Crush the corn chips:
3. Add Feel Good Foods corn chips to a ziplock bag and crush with a rolling pin until fine crumbs form.
4. Mix in oregano, garlic powder, salt, and pepper.
Coat the feta:
5. Roll each feta cube in the crushed corn chip mixture, pressing gently so it sticks.
(Tip: Slightly brush cubes with olive oil before rolling in the crumbs).
Cook:
Air fryer:
1. Place coated cubes in the basket and cook at 180°C for 6–8 minutes until golden and crispy.
Oven:
Bake on a lined tray at 200°C for 10–12 minutes, turning halfway for even crunch.
Make the dip:
Mix Sour Cream Style, lemon juice, and herbs together in a small bowl.
Serve:
Place feta bites in a bowl or platter, with the dip on the side. Let it sit for 5 minutes while the Feta becomes hard.
