Ch-easy Gnocchi Bake

Cheesy. Gnocchi. Bake. Those three words together just make you go all gooey and warm inside, and this recipe delivers on the expectations of how comforting this dish sounds and are maybe not the words you’d expect to hear when preparing a plant-based / dairy-free meal! Dairy Free Down Under has made it all possible with perfectly melting cheese, and with the addition of the Dairy Free Down Under Sour Cream Style, the Napoli sauce tastes straight out of Italy. Ready in 30mins, it’s the perfect recipe for mid-week eats – guaranteed to satisfy. Prep time 5mins Cooking Time 25mins Serves Perfect to serve as a main dish for 3, or as a side dish for 4-6 INGREDIENTS
  • 1 packet of gnocchi
  • 1 brown onion finely chopped
  • Olive oil
  • 1 can of whole peeled tomatoes
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 3 tsps crushed garlic
  • 3 tbsps Dairy Free Down Under Sour Cream Style
  • 1 tsp smoked paprika
  • Salt & Pepper to taste
  • Fresh parsley chopped
  • 1 cup Dairy Free Down Under Mozzarella Style Shreds
  • 4-5 Dairy Free Down Under Mozzarella Style Slices
METHOD
  1. Pre-heat the oven to 220 degrees Celsius and prepare a small baking dish (approx. 20cm x 20cm)
  2. Warm olive oil in a pan over medium heat and add your chopped onion and garlic, cook gently for 5mins or until soft, then stir through the tomato paste
  3. Add your whole peeled tomatoes and crush them down, add sugar, salt & pepper and simmer for 5mins
  4. Reduce the heat to low, then stir in the Dairy Free Down Under Sour Cream Style, paprika and parsley
  5. Line the bottom of your baking dish with Dairy Free Down Under Mozzarella Style Slices
  6. Bring a pot of water to the boil and cook gnocchi to packet instructions (should only take a few minutes), once cooked add the gnocchi straight from the boiling water to the pan, reserve 1/2 cup of the pasta cooking water
  7. Add a splash of the pasta cooking water to the baking dish, then pour in the gnocchi and sauce, mix everything together well
  8. Top with mozzarella and bake for 15mins. Garnish with parsley and serve
