Creamy Kale & Roast Chickpea Salad

Recipe-Creamy Kale and Roast Chickpea Salad

INGREDIENTS:

  • 1 cup chopped kale
  • ½ cup sliced radish
  • ¼ cup cranberries
  • 1/3 cup DFDU sour cream
  • ½ cup roasted chickpeas
  • 1 tbsp olive oil
  • 1 handful roasted slivered almonds
  • salt and pepper to taste

METHOD:
1. Preheat the oven to 180 degrees
2. Coat chickpeas in olive oil, salt and pepper and bake until crispy
3. Place kale , radish , cranberries, almonds and chickpeas in a bowl. Place the sour cream in the bowl and mix well with your hands until all ingredients are well coated
4. Top with extra almonds, cranberries, salt and pepper
