These Loaded Mexican Sweet Potato Fries are everything you want in a comfort food recipe—crispy, creamy, zesty, and 100% dairy-free. Made with golden roasted sweet potato fries as the base, they’re topped with Dairy-Free Down Under Cheddar Style Shreds, generous dollops of our Sour Cream Style, and all your favourite Mexican-inspired toppings like black beans, avocado, corn, red onion, and lime. It’s a flavour-packed, plant-based dish that’s perfect for lunch, dinner, game day, or weekend entertaining.

INGRIDENTS 

For the fries:

  • 2 large sweet potatoes, peeled and cut into fries
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

For the toppings:

  • 3/4 cup Dairy-Free Down Under Cheddar Style Shreds
  • 1/2 cup Dairy-Free Down Under Sour Cream Style
  • 1/2 cup black beans (drained & rinsed)
  • 1/4 red onion, finely diced
  • 1/2 avocado, diced or smashed
  • 1/4 cup corn kernels (grilled or pan-toasted for extra flavour) 
  • Fresh coriander or chives, chopped & Lime wedges (for serving)

METHOD 
  1. Preheat the oven to 200°C (400°F). Line a baking tray with baking paper.
  2. In a bowl, toss sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread evenly on the tray and bake for 25–30 minutes, flipping halfway, until crispy and golden.
  4. If wanting to melt the Dairy-Free Cheddar: Remove from the oven. Sprinkle DFDU Cheddar Style Shreds generously over the fries and return to the oven for 5–7 minutes until golden.
  5. Top with black beans, corn, onion, avocado, jalapeños (if using), DFDU Cheddar Style Shreds (if didn’t melt), and dollops of DFDU Sour Cream Style.
  6. Sprinkle with coriander or chives, squeeze over lime, and dig in!
