

A Warm, Fresh Dairy-Free Salad Everyone Loves Sharing
This Roast Nut & Feta Style Salad is one of those simple, fresh dishes that always makes its way onto the family table. With golden roasted pumpkin, crisp greens, and creamy Dairy-Free Down Under Feta Style, it’s the perfect balance of flavours and textures. Easy, wholesome, and ideal for weeknights or weekend gatherings.

- 600 g pumpkin, peeled and cut into 2 cm cubes *optional
- 1 tbsp olive oil
- 1/2 tsp ground cumin (optional)
- 60 g baby spinach or rocket
- 100 g Dairy-Free Down Under Feta Style, crumbled
- 2 tbsp pepitas, toasted
- 1/4 small red onion, very thinly sliced
Dressing:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp maple syrup
- Salt & pepper
Method
- Preheat the oven to 200°C.
- Toss pumpkin with olive oil, cumin, salt and pepper. Roast for 25–30 minutes or until golden and tender.
- Whisk together the dressing.
- Toss warm pumpkin with greens, red onion and half the Feta Style.
- Arrange on a platter, scatter pepitas and remaining Feta Style.
- Drizzle with dressing and serve.
