INGRIDENTS
- 4 fresh corn cobs, husked
- 1 tbsp olive oil
- Salt & pepper, to taste
- 1/3 cup Dairy-Free Down Under Parmesan Style, finely grated or crumbled
- 1/4 cup Dairy-Free Down Under Sour Cream Style
- Juice of 1/2 lime
- 1 tbsp chopped coriander or parsley (optional)
- Pinch of smoked paprika or chilli flakes (optional for garnish)
METHOD
- Preheat oven to 200°C (or heat BBQ/grill to medium-high).
- Brush corn with olive oil and season lightly with salt and pepper.
- Roast or grill corn for 20–25 minutes, turning occasionally, until slightly charred and tender.
- Remove from heat and while still warm, sprinkle generously with Dairy-Free Parmesan Style.
- Mix Sour Cream Style with lime juice until smooth, then drizzle over the corn.
- Garnish with fresh herbs and a pinch of smoked paprika or chilli flakes if desired.
- Serve warm with extra lime wedges on the side.
