INGRIDENTS

4 fresh corn cobs, husked
1 tbsp olive oil
Salt & pepper, to taste
1/3 cup Dairy-Free Down Under Parmesan Style, finely grated or crumbled
1/4 cup Dairy-Free Down Under Sour Cream Style
Juice of 1/2 lime
1 tbsp chopped coriander or parsley (optional)
Pinch of smoked paprika or chilli flakes (optional for garnish)

METHOD

Preheat oven to 200°C (or heat BBQ/grill to medium-high).
Brush corn with olive oil and season lightly with salt and pepper.
Roast or grill corn for 20–25 minutes, turning occasionally, until slightly charred and tender.
Remove from heat and while still warm, sprinkle generously with Dairy-Free Parmesan Style.
Mix Sour Cream Style with lime juice until smooth, then drizzle over the corn.
